Lettuce Wraps



These filling wraps are ideal for a packed lunch. Loaded with fresh vegetables, eggs, nuts and seeds- they are guaranteed to satisfy. You can be creative and experiment with the filling, i.e. make it vegan by adding scrambled tofu, chickpea paste or mashed avocado. Leave out the sweet corn kernels if you want to assure a safe gluten free meal. The possibilities are, of course, endless. So go on, start with this recipe and come up with your own signature lettuce wraps.

Ingredients
- 2 hard boiled eggs
- ½ cup carrot, grated
- ½ cup of fresh peas, boiled
- 1 tomato, chopped
- 1 tablespoon sweet corn kernels, boiled or canned
- 1 tablespoon almonds, grounded
- 1 tablespoon of bean sprouts
- 1 teaspoon of flaxseeds
- 1 shallots, thinly sliced
- 1 teaspoon of parsley, chopped
- 1 tablespoon of lemon juice
- 1 dash of black pepper or paprika
- Salt to taste
- 4 lettuce leaves
Method
- In a large bowl take eggs, peas and sweet corn kernels. With a potato masher or a spoon mash the ingredients until eggs become crumbly and the mixture comes together.
- Add remaining ingredients except the lettuce leaves. Mix well. Spread over lettuce leaves and serve.
