This colorful salad has enough flavour that you can forget about adding that topping. You can have this as a main with tempeh, tofu, nuts or any other source of proteins or fat. Personally, the smooth texture and spicy flavor of this meal also perfectly complements a salad.

Ingredients
For marinated mushroom
- 1 cup button mushroom
- 2 tablespoon apple cider vinegar
- 2 tablespoon orange juice
- 1 shallots, thinly sliced
- 1 clove garlic, minced
- 1 teaspoon brown sugar
- Dash of salt and pepper
- 1 teaspoon olive oil
For cabbage slaw
- ½ red cabbage, small head
- 1 cup shredded pineapple
- 1 apple, peeled
- Salt and pepper to taste
Method
- For marinated mushrooms, mix everything in a sauce pan, bring to a boil and simmer for 10 minutes.
- Meanwhile shred cabbage, pineapple and apple. Mix together with salt and pepper (only a pinch!). Serve with marinated mushrooms.
