Red Cabbage Slaw with Marinated Mushroom

This colorful salad has enough flavour that you can forget about adding that topping. You can have this as a main with tempeh, tofu, nuts or any other source of proteins or fat. Personally, the smooth texture and spicy flavor of this meal also perfectly complements a salad.

Ingredients

For marinated mushroom

  • 1 cup button mushroom
  • 2 tablespoon apple cider vinegar
  • 2 tablespoon orange juice
  • 1  shallots, thinly sliced
  • 1 clove garlic, minced
  • 1 teaspoon brown sugar
  • Dash of salt and pepper
  • 1 teaspoon olive oil

For cabbage slaw

  • ½ red cabbage, small head
  • 1 cup shredded pineapple
  • 1 apple, peeled
  • Salt and pepper to taste

Method

  • For marinated mushrooms, mix everything in a sauce pan, bring to a boil and simmer for 10 minutes.
  • Meanwhile shred cabbage, pineapple and apple. Mix together with salt and pepper (only a pinch!). Serve with marinated mushrooms.
