Roasted Garlic Broccoli

Roasted garlic broccoli is a superbly easy, nutritionally packed, delicious snack. Snacking on broccoli might be worlds apart from the norm, but the more you start loving natural foods, the more you’ll love snacks like this!  You can make them in batches and store them in refrigerator for one or two days and eat them as you desire. The recipe is simple. Toss some large florets of broccoli and bake in a high heat oven. The natural sugar of broccoli caramelizes in the process of roasting and makes the dish delicious. The same process can be done with cauliflower, too. For variety, you may want to combine both.

Ingredients

  • 2 head of broccoli, cut lengthwise into large flowerets
  • 1 teaspoon extra virgin olive oil
  • 1 clove of garlic , pressed or finely minced
  • 1 tablespoon of lemon juice
  • ¼ teaspoon salt
  • ½ teaspoon sugar
  • 1 dash of black pepper, grounded

Method

  • Line a baking sheet with aluminum foil, place in the oven, preheat oven at 500 F (260 C)
  • In a large bowl mix olive oil, garlic, lemon juice, salt, sugar, black pepper. Toss broccoli in to combine.
  • Bring out the baking sheet from oven, spread broccoli over and bake for 10-12 minutes, until light brown.
