Sauteed Spinach with White Bean and Mushroom

If you’re a fan of Popeye’s favourite food, you’ll love this recipe. This meal is nutrient-rich and makes for a great post-workout meal. To increase the types and quality of protein even further, I have added white beans and sprinkled a handful of peanuts. Even Popeye would be jealous.

Ingredients

  • ½ tablespoon olive oil
  • 4 cloves of garlic, minced
  • 3 cup (6 oz.) fresh spinach
  • ½ (15.5 oz.) can white beans, drained and rinsed
  • 1 cup mushroom, sliced
  • 2 tablespoon  peanuts, roughly chopped
  • Dash of thyme
  • ½ teaspoon salt or 1 tablespoon soy sauce, tamari

Method

  • Heat oil in a large skillet, add garlic and fry till soft. Add spinach and sauté until wilted. This will take approximately three to five minutes.
  • Stir in beans, mushrooms, cashew nuts and thyme. Fry for two minute. Add tamari. Serve.
