Tomato and Nut Butter Sandwich

A surprisingly easy recipe for breakfast. It takes only minutes to prepare but it keeps your hunger at bay for hours. All you need is to toast the bread, spread smooth nut butter over, place tomatoes and your favorite crunches. Be generous with tomatoes as they are packed with vitamin C and perfectly complements this rich and crunchy sandwich.

Ingredients

  • 4 slice gluten free, yeast free bread
  • 4 tablespoon nut butter*
  • 2 tomatoes, sliced
  • 1 shallot, thinly sliced
  • Lettuce leaves
  • Salt and pepper to sprinkle

Method

  • Toast bread slices. Apply thick layer of nut butter on each bread pieces. Arrange tomato slices and shallots over two bread slice. Sprinkle salt and pepper. Top with lettuce and other slices of bread. Serve and eat!

* To make your own homemade nut butter spread, finely ground 1 cup mixed nuts and ½ cup sunflower seeds in a blender. Moisten with oil to make a paste. Refrigerate in a covered jar.
