Vegan Sausage Rolls


1/2 cup mashed kidney beans
1/2 cup mashed berlotti beans
1/2 cup crushed roasted peanuts
1/2 cup grated zucchini
1/2 cup grated pumpkin
1/2 cup grated sweet potato
1/2 cup chopped mushrooms
1/2 cup roughly chopped fresh basil
2 celery stalks – chopped
1/2 tablespoon garam marsala
1/4 teaspoon nutmeg
1/2 cup rolled oats
salt and pepper to taste
1 packet vegan puff pastry
non dairy milk (for glazing)


  1. Preheat over to 180 degrees.
  2. Combine all ingredients, except for pastry and milk, in a large bowl and mix well - for best results use your hands.
  3. Cut each pastry sheet in half and place a long line of mixture onto each sheet. Wrap the pastry around the mixture to form the shape of sausage rolls.
  4. Pierce the rolls with a fork, glaze by brushing with milk. Bake in the oven for 20-25 minutes. Rolls will be done when the pastry is a brown and crispy.
